Pasta in Tomato-Bell Pepper sauce

 This is the newest pasta recipe I tried for my pasta-loving daughter and it tasted really delicious. I added lot of veggies and packed for her lunch-box. It can be a great-tasting lunch-box menu for school-goers and even for office-goers, too.
Ingredients :
Pasta (any shape)
capsicum/bell pepper : 2(medium,chopped finely)
Tomato : 3(medium,chopped finely)
Vegetables of your choice(carrot, beans, green peas, corn) : 1 cup(chopped)
Onion : 2 (big, sliced)
Garlic : 7-8 pods,crushed
Oil : 2-3 tblsp.
Fresh Cream : 3 tblsp.
Salt and black pepper to taste
Dried mixed Italian herbs for seasoning

Method :
  • Cook pasta in a big bowl of boiled water with 1 tsp. salt and 1 tsp oil until they are just cooked, but not overcooked.
  • Heat 2 tblsp. oil in a pan, add onions and saute until they change color, add crushed 4-5 crushed garlic, stir for a minute and then add chopped capsicum and tomatoes. saute until capsicum and tomatoes softens. Season with salt and black pepper. Remove from heat, let it cool and then blend it into a thick sauce. Add fresh cream and mix well. Keep aside.
 
  • Heat about 2 tblsp. oil in another pan, add chopped vegetables and saute until they are almost done. Add rest of the crushed garlic and immediately add prepared capsicum-tomato sauce. Now add cooked pasta. Give everything a good mix, season with salt, black pepper and Italian herbs. Mix well and serve hot.
