Malacca Fried Rice - A Delicious Leftover Option

This recipe belongs to Malacca, which is the third smallest Malaysian State. It is located in the southern region of the Malay Peninsula, on the Straits of Malacca. It is about 150 kilometer South of Malaysian Capital, Kuala Lumpur.
This fried rice recipe is extremely popular in Malacca because of the ingredients. Its totally different from any other Chinese Fried rice recipes. The special ingredients are roasted pork, shrimp, egg and green peas. This recipe makes a great use of any leftover rice.
I always make this fried rice whenever I have leftover cooked rice, but it has to be long-grain rice. I never add pork in mine, for me eggs and shrimp are enough in one meal. This recipe is a great one-pot meal which definitely will give you comfort and satisfaction.



Ingredients :
Eggs : 2
Shrimp (Big/medium) : 12-15 pieces
Onion (medium) : 1 (chopped)
Ginger(finely chopped) : 1 tblsp.
Garlic cloves : 2(big)(minced)
Scallions/green onion/Spring onion(green parts only) : 1/2 cup(roughly chopped)
Green Chilli sauce : 1-2 tsp.
Light Soy sauce : 2 tblsp.
Green Peas : 1/3 cup
frozen corn kernels : a fistful
Salt and black pepper to taste
Oil : 3 tblsp.
Long-grain rice(cooked) : 11/2 cup


Method :
  • In a bowl, beat the eggs well and season with salt and black pepper. Heat 1 tsp. oil in a non-stick pan or wok, pour in the beaten eggs, cook for about 1 min. without stirring, until set. Roll up the omelet and remove from pan. 
  • Apply little salt to the shrimps and lightly fry them for a minute on both sides. Keep aside.
  • Heat the remaining oil in the same pan, add chopped onions, ginger, garlic and shrimps. In medium low heat, cook for 2 minutes. Make sure garlic does not burn.
  • Add chilli sauce, scallions, peas and soy sauce. Stir to heat through, then add the cooked rice. Season with salt and black pepper to taste. Fry the rice over medium low heat for 5-6 minutes.
    • Serve the rice on a wide plate. 
    • Cut the omelet into thin strips and decorate the rice with egg strips.
